We used these moulds for many years, they do not flex with the heat of the filling or oxidise when put in the fridge. They are ideal for making square slabs (10 mm x 360 x 360 mm) of chocolate ganache centres, pate de fruit, marzipan etc. that will then be cut to size and enrobed.
